When I received the email to attend an exclusive Paleo waffle/pancake event, I was a tad skeptical. What is Paleo?
A paleo diet is a dietary plan based on foods similar to what might have been eaten during the Paleolithic era, which dates from approximately 2.5 million to 10,000 years ago.
A paleo diet typically includes lean meats, fish, fruits, vegetables, nuts and seeds — foods that in the past could be obtained by hunting and gathering. A paleo diet limits foods that became common when farming emerged about 10,000 years ago. These foods include dairy products, legumes and grains.
You can understand my skepticism, how can paleo waffles work? And do they taste good? Well, they had me sold on Paleo waffle ice cream sandwiches! If you don’t know this already, I am slightly addicted to ice cream, I can eat it for every meal if my pants would still fit. (Why does ice cream DO THIS??)
Birch Benders was started by Co-founders Matt LaCasse and Lizzi Ackerman- They were looking for a way to bring healthy all natural pancakes and waffles back to the table, but with easy for us busy families. (Bless them!!)
And then, in a brilliant moment of clarity, they thought, “Hey, what about making it easier, Frozen waffles” and an idea was born. What an idea it was! Easy to make, easy to eat, crazy easy for a mom with kids in high school, middle school and elementary school to get food in their tummy’s before they head out the door. How do they taste? About as good as the look and LOOK at them!
Okay, so these have ice cream on them but you get the gist, right? They are so good I’d put them up against the major brands twice and three times on Fridays. Crispy, flavorful and not full of weird texture you might think from a health food. It’s a good way to feed the kids (and yourself, because admit it, it’s been a while since you have had a toaster waffle)
Check them out, Birch Benders is a local Colorado company that is doing it right! You can buy them here – Birch Benders, or pick them up at Sprouts, Target, Safeway, Natural Grocers or Albertsons and keep an eye out for them to be in many more stores as they continue to grow!
